Aubaine have been working with Maille on some exciting projects, including our first ever menu with mustard in every course!

Aubaine and La Maison Maille


Maille recently became our newest French neighbours when they opened a store right around the corner from our Dover Street branch.


Using the close proximity of Maille’s boutique and our restaurant to our advantage, our chefs developed unusual yet delicious flavour combinations to make up one extraordinary mustard menu for a lunch hosted in Dover Street.


MENU


Starter:
Guinea fowl rillette with Cognac mustard relish,
Chardonnay wine mustard Maille,
Cognac mustard Maille and Maille cornichons

 

Main:
Lemon sole fillet
with clams mariniere a la moutarde de Chablis and salsify rotie


Dessert:
Caramelized mango,
white chocolate, exotic baba
vanilla and mascarpone chantilly

The food was delicious, proving that mustard isn’t just a condiment, but an ingredient to cook with at all stages of a meal!

The food, wine and service were utterly faultless and as for the interior… I want my whole house to look like that! While you won’t find Aubaine everywhere (it’s not Pizza Express people) there are a fair few all over London. So next time you’re in town, I’d highly recommend getting yourself to the nearest one… and ordering the Sea Bass.
