Our gooey skillet cookie is a treat that will warm even the coldest of evenings. Ingredients
90g butter
80g cream cheese
¼ teaspoon salt
70g caster sugar
60g brown sugar
1 egg
1 vanilla Pod
150g flour
1 tbsp cornstarch (15g)
1 tsp baking powder
1 tsp bicarbonate of soda
150g chocolate buttons (half chopped)
Method
Preheat oven to 180 degrees celsius. Butter a single serving cast-iron skillet.
Whisk together butter, cream cheese, sugar & salt. Follow by adding the egg & vanilla, and mix well.
Sift dry ingredients together and slowly incorporate into the wet batter.
Finally, add chocolate chips and combine.
Wrap in cling film into a cylindrical shape. To serve, slice a 50g piece and place it in the pre-buttered dish to bake for 12 minutes.
Remove from oven and serve warm with a dusting of powdered sugar or a scoop of vanilla ice cream, or both!
