Classic French Toast Brioche Recipe

Today, we’re sharing the secret to our classic, most sought-after breakfast fix – the recipe to our French toast brioche! A fan favourite, this dish is easy to recreate with quality ingredients. For this recipe, we’ve included our signature fruits, but you can use any fruits you have at home and even substitute yogurt instead of crème fraiche.

Ingredients (serves 2)

60g blueberries

4 strawberries, cut in half

1 banana

50g crème fraiche

80ml maple syrup or honey

20g icing sugar

3 thick slices of brioche, cut in half diagonally

For the custard

100ml double cream

100ml milk

55g sugar

3g cinnamon

4 whole eggs

Method

1. Mix the strawberries & blueberries with half the maple syrup. Cut the banana in two lengthwise and cut again in the middle with an angle. Dust the banana with icing sugar and caramelise under the grill or with a blow torch.

2. In a large shallow bowl, combine the custard ingredients well. Soak each slice of brioche in the custard, then pan fry with some vegetable oil and a knob of butter until both sides are golden brown.

3. To plate, make a swirl of crème fraiche on each plate and place 3 pieces of brioche on top. Add the syrupy berries and bananas, drizzle the rest of the maple syrup and dust with icing sugar. Garnish with mint or basil cress.
